Detailed course itinerary
This French cooking course is ideal for both ‘good’ and ‘bad’ cooks everywhere who want to achieve the fabled status of a becoming a genuine chef.
You will learn from an expert how to cook delicious French food including learning how to prepare and cook typical French specialities.
Your course starts with a tour of the local market in order to buy fresh, seasonal produce for your cooking lesson and on your way back to the Chef’s apartment you’ll stop off at specialist shops to buy wine and any other ingredients needed for the day’s menu.
This is a hands-on class, so don your apron and chef’s hat, roll up your sleeves and get ready to start cooking.
Once the menu is ready, you and your fellow would-be cooks will sit down with the professional chef and eat the delicious French food you have prepared.

Market Visit and Cooking Class Schedule
- You will meet at a designated meeting point at the Cours Slaeya market in Nice at 9.30am
- Over a quick coffee, your Chef will explain the history of the area, the local food and regional cooking
- You will spend the next hour in the market learning how to select fresh, seasonal produce
- On your way to the Chef’s apartment, you’ll stop off to buy wine and other ingredients needed from the local specialist shops
- Back at the apartment, you’ll spend the next 2 hours learning how to cook an authentic Niçois meal before sitting down to eat the food accompanied by a glass of local wine
- You class ends around 3pm after your lunch

- The history of Nice, the food and cooking from the region
- How to cook a traditional French meal
- If pissaladière (a type of French pizza) is on the menu, you will learn how to make dough for the pizza base
Sample French Dishes
All menus are prepared with local fresh produce according to the season and Rosa will adapt the menu to accommodate any dietary requirements you may have:
- Tomato-tapenade tart on a parmensan sable
- Tian de blettes (Swiss chard gratin with egg and cheese)
- Mediterranean Sea bass fillets with sauce vierge
- Roast lamb from Alpes de Haute-Provence with thyme flowers and garlic
- Artichauts à la barigoule (Artichokes braised with white wine)
- Poulet à la niçoise (Chicken with red and green peppers)
- Oven baked sea bream with onion, potato, tomato and lemon
- Les petits farcis (Niçois stuffed vegetables)
- Honey-fig tart with almonds
- Poached pears with vanilla ice cream
- Lemon or Strawberry tart
